Pad Thai

Pad Thai is probably the most famous Thai dish worldwide. Sweet, sour, salty, and umami - all flavors in one dish.
Ingredients
Noodles & Protein
- 200g rice noodles (flat, 5mm wide)
- 150g shrimp or chicken
- 100g firm tofu, cubed
- 2 eggs
Sauce
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp palm sugar (or brown sugar)
- 1 tbsp soy sauce
Garnish
- 100g bean sprouts
- 3 spring onions
- 50g roasted peanuts, chopped
- 1 lime
- Chili flakes
Instructions

Noodles: Soak in warm water for 30 minutes until pliable. Drain.

Sauce: Mix tamarind, fish sauce, sugar, and soy sauce.

Heat wok: Heat oil until very hot. Fry tofu until golden, remove.

Shrimp: Briefly stir-fry, remove.

Eggs: Crack into wok, stir lightly.

Combine: Add noodles, pour sauce over. Mix well.

Finish: Fold in tofu, shrimp, sprouts, and spring onions.

Serve: Garnish with peanuts, lime wedges, and chili flakes.
