Pad Krapao Gai Kai Dao

Pad Krapao is one of the most popular dishes in Thailand. Quick to prepare, spicy, and perfect served with a fried egg (Kai Dao).
Ingredients
- 300g chicken breast, diced small
- 4 garlic cloves, chopped
- 2-4 Thai chilies, chopped (to taste)
- 2 tbsp oil
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 large handful Thai basil (Bai Krapao)
- 2 eggs
- Jasmine rice for serving
Instructions

Heat wok: Heat oil in wok until very hot.

Garlic & chili: Briefly fry garlic and chilies until aromatic.

Chicken: Add chicken, stir-fry until cooked through.

Season: Add oyster sauce, soy sauce, fish sauce, and sugar. Mix well.

Basil: Remove from heat, fold in Thai basil (briefly, it shouldn’t wilt).

Fried eggs: Fry eggs in a separate pan - preferably with crispy edges.

Serve: Rice on plate, pad krapao on top, fried egg on top. Done!
Tip
Authentic Thai basil (Bai Krapao / Holy Basil) has a slightly peppery taste. Italian basil works in a pinch but tastes different.
