Beef Barbacoa

Beef Barbacoa is prepared similarly to a stew and has a consistency like pulled pork. The meat is wonderfully versatile - use it in tortillas, tacos, or many other dishes.
Ingredients
- 1 tbsp oil
- 1 kg beef goulash
- 1 onion
- 4 garlic cloves
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 cup beef broth
- 400 g canned tomatoes
- 1 chilli (dried or fresh)
- 2 limes
- 2 tbsp apple cider vinegar
- 2 tsp salt
- 1 tsp pepper
- 1/4 tsp ground cloves
- 3 bay leaves
Instructions
- Dice the onion, finely chop the garlic, and prepare the broth.
- Sear the meat in a pot over high heat on all sides (best done in batches so it doesn’t start boiling). This should take about 10 to 15 minutes.
- Turn down the heat, add the onions to the pot and sauté until translucent. Then add the garlic, cumin, and oregano, stir briefly, add the meat back, and stir again.
- Add the broth, tomatoes, bay leaves, ground cloves, chilli, apple cider vinegar, and lime juice, stir, and let everything cook over low heat for about 3 to 4 hours.
- Afterwards, if the meat hasn’t fallen apart yet, break it into smaller pieces and season everything again to taste.
