Beef Barbacoa

Beef Barbacoa is prepared similarly to a stew and has a texture like pulled pork. The meat is wonderfully versatile - use it in tortillas, tacos, or many other dishes.

Ingredients

  • 1 tbsp oil
  • 1 kg beef stew meat
  • 1 onion
  • 4 garlic cloves
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp chipotle powder (or cayenne)
  • 3 tbsp apple cider vinegar
  • Juice of 2 limes
  • 1 can tomatoes (400g)
  • 250 ml beef broth
  • 3 bay leaves
  • Salt & pepper

Instructions

  1. Sear the meat: Heat oil in a large Dutch oven. Sear beef in batches until browned on all sides. Remove and set aside.

  2. Aromatics: Sauté onion and garlic in the same pot until translucent.

  3. Spices: Add cumin, paprika, and chipotle powder, toast briefly.

  4. Deglaze: Add apple cider vinegar and lime juice. Add tomatoes, beef broth, and bay leaves.

  5. Braise: Return meat to pot. Season with salt and pepper. Cover and braise at 160°C in oven or on low heat for 3-4 hours until meat falls apart.

  6. Shred: Shred meat with two forks and toss in the sauce.

  • In tacos with pickled onions
  • Over rice with black beans
