Beef Barbacoa

Beef Barbacoa is prepared similarly to a stew and has a texture like pulled pork. The meat is wonderfully versatile - use it in tortillas, tacos, or many other dishes.
Ingredients
- 1 tbsp oil
- 1 kg beef stew meat
- 1 onion
- 4 garlic cloves
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp chipotle powder (or cayenne)
- 3 tbsp apple cider vinegar
- Juice of 2 limes
- 1 can tomatoes (400g)
- 250 ml beef broth
- 3 bay leaves
- Salt & pepper

Sear the meat: Heat oil in a large Dutch oven. Sear beef in batches until browned on all sides. Remove and set aside.

Aromatics: Sauté onion and garlic in the same pot until translucent.

Spices: Add cumin, paprika, and chipotle powder, toast briefly.

Deglaze: Add apple cider vinegar and lime juice. Add tomatoes, beef broth, and bay leaves.

Braise: Return meat to pot. Season with salt and pepper. Cover and braise at 160°C in oven or on low heat for 3-4 hours until meat falls apart.

Shred: Shred meat with two forks and toss in the sauce.
