Beef Barbacoa

Beef Barbacoa is prepared similarly to a stew and has a consistency like pulled pork. The meat is wonderfully versatile - use it in tortillas, tacos, or many other dishes.

Ingredients

  • 1 tbsp oil
  • 1 kg beef goulash
  • 1 onion
  • 4 garlic cloves
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 cup beef broth
  • 400 g canned tomatoes
  • 1 chilli (dried or fresh)
  • 2 limes
  • 2 tbsp apple cider vinegar
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 tsp ground cloves
  • 3 bay leaves

Instructions

  1. Dice the onion, finely chop the garlic, and prepare the broth.
  2. Sear the meat in a pot over high heat on all sides (best done in batches so it doesn’t start boiling). This should take about 10 to 15 minutes.
  3. Turn down the heat, add the onions to the pot and sauté until translucent. Then add the garlic, cumin, and oregano, stir briefly, add the meat back, and stir again.
  4. Add the broth, tomatoes, bay leaves, ground cloves, chilli, apple cider vinegar, and lime juice, stir, and let everything cook over low heat for about 3 to 4 hours.
  5. Afterwards, if the meat hasn’t fallen apart yet, break it into smaller pieces and season everything again to taste.
